Cook for 10–15 minutes, stirring often. 3. Stir in the sugar and continue cooking for another 5–10 minutes. 4. In a separate bowl, beat the eggs. Slowly add a small amount of the hot rice mixture into the eggs while whisking, this tempers the eggs so they don’t scramble. 5. Once warmed, slowly pour the egg mixture back into the pot, stirring constantly. 6. Add vanilla, butter extract, cinnamon, and nutmeg. Continue stirring for 3–5 minutes until thick and creamy. 7. Pour into a dish and let it sit for about 2 hours.
* If you like it cold, refrigerate after it cools.

* 2 cups water * 2 cinnamon sticks * 1 cup rice * 2 cups whole milk * ½ can evaporated milk * ½ can sweetened condensed milk * 1 tsp vanilla extract (optional) * 2 tbsp caramel sauce * 1 tbsp butter * Pinch of salt * 2 tsp ground cinnamon
Instructions
1. In a pot, bring water and cinnamon sticks to a boil. 2. Add the rice, cover, and cook for 10–15 minutes until most of the water is absorbed. 3. Stir in the whole milk, evaporated milk, condensed milk, and vanilla. Cover and cook for another 10 minutes, stirring occasionally. 4. Add the caramel sauce, remove the cinnamon sticks, then add butter, salt, and ground cinnamon. 5. Stir well and cook for another 10 minutes. 6. Serve warm or chilled with extra cinnamon on top.

I made arroz con leche for NYE! I add cloves, star anise, cinnamon with a handful of golden raisins, the can of evaporated milk and half can of condensed milk. ❤ this!
My Mom use to bake this all the time with the leftover rice. She would use rice, evaporated milk, vanilla flavoring, cinnamon a little nutmeg, sugar, eggs, butter and you got to put raisins and a dash of salt, a little sprinke of cinnamon on top. Place in the oven and bake. I'm making this tomorrow. You brought back memories rice pudding and bread pudding was my Mom's go to, she had eight mouths to feed, and we loved it.

Love rice pudding! I use half coconut milk and milk instead.
The reason you add a small portion to the eggs is so that the eggs dont split from the heat of the pot
