Oh, the weather outside is so cool it makes you want to have a big bowl of delicious tomato soup. And today was the day I made it. I realized how easy it was and how few ingredients I needed. I gathered them together and in under 30 minutes I had it made. I hope you will consider making some. If it’s cool where you live, you will want this. Recipe below.

Ingredients:
1/2 medium onion, finely diced
1 Tbsp garlic, minced
1 Tbsp olive oil
1 28 oz can whole peeled tomatoes*
2 cups chicken broth
salt & pepper to taste
1/2 Tbsp butter
1/4 cup grated parmesan cheese

Directions:
Heat olive oil in boiler. Add onion and cook until tender. Stirring often. Toss in garlic and cook for 1 minute, stirring constantly, be careful not to let garlic burn. Pour in tomatoes, using spoon or knife break tomatoes up in the pot. Add chicken broth, salt, and pepper taste. Put a lid on cocking to one side to let the steam escape and simmer for 15 – 20 minutes. Stir often. If the soup starts to get thick, add a small amount of water to loosen it up. After 15 – 20 minutes, using a blender or an emersion blender, blend until smooth. note: if using a regular blender, put on the lid but do not insert the cap, cover with a cloth and blend. Otherwise, the lid will pop off and soup will splatter. With the soup still in the pot, stir in butter and parmesan cheese. Serve with crackers of your choice or a delicious sandwich.

* you can also use crushed tomatoes, or fresh tomatoes

  10. Homemade tomato soup is 100 percent better than canned soup. Thanks for this recipe. I would definitely add a little basil, as nothing goes better with tomatoes than basil. In fact, my daughter and I make BTB's instead of BLT's. Fresh basil leaves in the place of lettuce, just brings something special to the sandwich.
