Pignoli Cookies 👌🏻
Ingredients (for roughly 40 cookies):
1 pound of almond pastes (2 8oz packs)
2 cups of pine nuts
3 egg whites
1/2 cup of sugar
1/4 cup of flour
1 teaspoon baking powder
Steps:
-Shred the almond paste and pour the flour and baking powder on top
-Mix 3 egg whites till fluffy. Add the sugar and mix
-Add the almond paste mixture evenly into the egg whites. Keep folding as you mix.
-Switch to mixer and ensure the consistency is creamy / pasty
-Scoop the mixture, add the pine nuts
-Tip: Wet your fingers between cookies/steps so they don’t stick to you
-Bake at 350 for 20 mins
