Many Italians eat lentils on New Year’s Eve because they look like coins. The idea is, the more you eat, the more wealth you’ll have in the coming year. But honestly? I just think this Italian lentil soup is the ultimate Gentle Reset for your body after the holidays.

It is packed with plant-based protein, loaded with fiber for gut health, and costs pennies to make. It’s cozy, filling, and exactly what you need to start the year feeling fresh (without starving yourself).

  1. Ingredients:
    ▢Extra-virgin olive oil
▢1 medium yellow onion, finely chopped
    ▢4 large garlic cloves, minced
    ▢2 carrots, chopped
    ▢1 celery rib, chopped
    ▢Kosher salt
    ▢Black pepper
▢1 (28-ounce) can whole tomatoes (I like San Marzano)
    ▢5 cups vegetable broth
    ▢1 dried bay leaf
    ▢1 tablespoon Italian seasoning
▢1/2 to 1 teaspoon red pepper flakes
▢1 cup green lentils, rinsed (or brown lentils)
    ▢2 cups baby spinach
    ▢1 cup chopped parsley leaves
    ▢Splash red wine vinegar
▢Freshly grated parmesan cheese, for garnish (optional)

Sauté the aromatics. Heat 2 tablespoons olive oil in a large Dutch oven over medium-high heat. Add the onion, garlic, carrots, and celery; season with salt and pepper. Cook, stirring occasionally, until fragrant and slightly tender, about 5 minutes.

Simmer. Add the tomatoes and lightly crush. Stir in the vegetable broth, bay leaf, Italian seasoning, red pepper flakes, and lentils. Season again with salt and pepper. Bring to a boil, then reduce heat, partially cover, and simmer 20–30 minutes, until lentils are tender but intact.

Finish and serve. Remove from heat and stir in the spinach, parsley, and a splash of red wine vinegar. Adjust seasoning, then serve with a drizzle of olive oil and Parmesan, if desired.

  3. Ha! I just finished my own lentil soup for lunch on this New Year's Eve. Didn't know I was eating a bowl of good luck but I'll take it. 😃
