Pizza night! This week’s special had my 3 cheese mix (mozzarella, provolone, and smoked Scamorza) plus smoky bacon cheddar, grated Pecorino Romano, a layer of thin sliced Yukon gold potatoes, diced red onions, my cilantro lime ranch sauce, bacon crumbles, scallions, and fresh herbs

    Excellent job! Great crust and browning. I know it’s scary but I’d recommend 30s – 1min more for a bit of blackening up top

  7. How are you controlling the temp on the oven? Do you blast it for 30m until it reaches a certain temp on the stone and then put the pizza in and turn the heat down and cook for how long? Just curious – I’ve got a gozney and dialing in the time and temp is an art, it seems!

    I would never in a million years think to put potatoes in pizza myself. First thought I had reading the title was ‘how many carbs is that?’ lol.

    But that being said, it doesn’t look like you added that many potatoes and it could be a unique taste profile. I know a few polish meals where they add cheese to potatoes. Not that I have tried it myself.

    We have a small chain of pizza places here called “pizza luce” and they do a loaded baked potato, it’s so good. They do quite a few unique ones. They have an eloté one that is amazing.
