I used Marcella Hazan tomato sauce recipe “tomato sauce with onion and butter,” but I used cipollini onions instead of a sweet or white onion.
This shape is found in Marche, but especially in the province of Pesaro and Urbino. Also found in Umbria. The name means little snails. This is the handmade variation of the extruded shape “Lumache.” I got this idea for the variation from Pasta Maker Nicolas Potoglou. I like the extruded shape, but I feel that the handmade variation is so much more beautiful. This pasta was made for a long time by the nuns of the convents of Poor Clare’s and Benedictine scattered throughout the Marche. Traditionally, it’s served in a broth with cabbage and sausage, so next time I make this shape, going to serve it that way.
