I worked at a Papa Johns a couple years ago and NO ONE liked sending an anchovy pie through the oven. They made the whole store stink. There was also a policy that only managers could top the pizzas with anchovies, I’m not sure why but I suspect cross contamination worries.

This is a GOOD thing! Hardly anyone orders anchovies on their pizza, most pizza places may not even stock it anymore. When someone as cultured as we are asks for anchovies, we have NO IDEA how old they are, whether they were stored covered or uncovered etc. If you like anchovies on your pizza (which I do) it is so much better and safer if you the customer just have some anchovies you can add fresh once the pizza arrives

I worked pizza for 13 years. I would put the entire tin on the pizza minus two for myself to eat after I made it. Even a busy shop gets like 3 orders a year for anchovies, so there’s no point in saving the open tin.
I recommend anchovies, pepperoncini, and jalapeños. Also herring is good.

Trust me, as with any uncommon pizza ingredient you’re better off them handing you an unopened can of it.
When I worked in pizza production the anchovy orders were rare, but they were the the worst. Everyone hated touching them and it was always some tool that ordered a medium pie with extra anchovies 10 minutes before closing. I have no idea where the anchovies came from but I would diligently put the tub of anchovies in the fridge every night, clean the whole store, and then go home. Most days there was the same amount of anchovies in the tub as the night before I put them away. This would go on for weeks. Then one day there’d be fresh anchovies on top of the previous anchovies. Again, I had no idea where the new anchovies came from, they’d just appear.

I’d rather they do this than bake them with the pizza. They’re so much better when you add them after the pizza come out of the oven.

I’ve had anchovies at an avpn neo pizza place that were awesome. I cant recall if they were baked in or not.
I tried to make a neo pizza at home with italian salt cured anchovies, whoaaa. Soo salty

Why not just deliver a raw crust, some pizza sauce and a block of cheese?

My dad learned in college that if he ordered anchovies on pizza, no one would eat is pizza. He passed the life hack onto me. More anchovies for me and the CannedFish fam!
