i like how he turned it into a teachable moment to give some advice on cutting chives and included reasons why it matters that they be cut correctly.
i like kenji, his book is lovely. his chives were pretty good but i’m sure someone will fly a plane into a couple of them.

I say this not as a chef, just as one of the many lurkers who had 68 days of chives in their reddit feed, but this was super informative. It’s one thing to launch airplanes into bad chives, but another to clearly explain how and why the chives should be cut a certain way.
Thank GOD we’re back to chives and off the stupid fucking knives.

Kenji mentions in the video that Barbara Lynch taught him how to properly cut chives at No. 9 Park.
Tangentially, No. 9 Park closed at the end of 2024. All of Barbara Lynch’s restaurants did, including her newest endeavor in Gloucester, which was only a couple of years old. I wish real life was more like a movie: *Hardscrabble local girl, who stole a bus at age 13, becomes the rising tide which lifts all boats*, but that’s not the story here.
The last I knew, the City of Boston was going after her for well over $1 million in back taxes. A couple of years prior there were credible reports of an abusive culture, tip shorting during the early days of the pandemic, and other trouble behind the scenes. Lynch came up under Todd English. This is a woman who came up hard (Southie’s Old Colony housing project, violent childhood, didn’t graduate high school).
When the allegations against Lynch broke, they were so disheartening. (I believe them, and I’m not minimizing them; I didn’t live through it, only read about.) The reports indicate alcohol was a factor in the toxic environment. I just wish none of this was the case.

I’m skeptical on them smelling differently, but I’ll be testing it out next time I cut some up.
2025’s chive saga was epic. I was just a casual bystander but were happy to be a witness at the end. I do now have a healthy bounce of chives growing on my garden and now know how to slice them (with towers, of course). Thank you all!

My chef taught me a longggggggg time ago instead of chopping chives imagine you’re shaving chives off and just that different mind set will make your cuts more clean and fluid.
Kenji is my favorite go to’s when I just want to watch someone cook a recipe without 150+ cuts and zooms of the camera. I don’t need the Mr. Beastifcation of everything on YouTube.
1. My chives are big enough to fly a B-52 bomber through them, with clearance. Seeing this video gives me hope that I can get better.
2. Kenji tickles me with that head cam setup.
3. I love how something like good knife work on an internet bulletin board with added features can get the world working on being better at whatever they do just for that sweet, sweet updoot. The approval of others is so much more than the approval of the self, it appears.
