It felt about time that I roasted a piece of cabbage and put a delicious sauce all over it. I seared the cabbage until it was deeply charred, then roasted it at 200°C for 30 minutes.

The sauce is very simple – olive oil, garlic, parsley stems, chopped tomatoes, high heat, a splash of white wine, and a big scoop of chilli paste and crème fraîche. Finish with some fresh parsley.
This is a perfect side for dinner, or you could mix some beans through the sauce and call it a day.

Ingredients:
Hispi cabbage
Chopped tomatoes
Garlic
Parsley
Calabrian chilli paste
Crème fraîche
White wine
Sherry vinegar
Salt and pepper
Extra virgin olive oil
