Prime Top Sirloin

    Took a prime top sirloin and seasoned it with my no-salt rub, then let it sweat. After that, I added salt and pepper. Smoked it on my offset with hickory to about 130°F internal, then seared it hot and fast on my Weber kettle over mesquite lump. During the sear, about two minutes per side, I hit both sides with Montreal grill seasoning. Pulled it at a solid medium. Even though it was prime, it’s still a lean cut, so I didn’t want to push it any further.
