100g butter (Divided into 75g and 25g
250g Prosciutto Tortellini (any pasta or stuffed pasta works)
50g Parmigiano Reggiano
1lt water
15g salt
Simmer pasta according to package instructions (minus 2 minutes)
Brown butter in a pan, add sage,
Once the sage is crispy, remove and add 100ml pasta water to the butter
Add pasta to sauce and cook with 25g of butter.
When things are saucy, add a little splash of water and your grated cheese.
Serve immediately.

When you add the pasta water and last 1/4 of butter what temp is your pan at? This is the best looking brown butter sauce vid I’ve been able to find! Everything else is just tragically melted brown butter..
