    #Recipe for the vegetable spread (called ikra in my culture):

    >Ingredients:

    ● Eggplant or zucchini, cubed (if using zucchini: wash only, do not peel)

    ● Onion, cubed (amount of onions varies according to the size of the eggplant/zucchini)

    ● 2 carrots, cubed

    ● 1 red bell pepper, cubed

    ● 2–3 tomatoes, cubed

    ● 1 tablespoon tomato paste or tomato sauce

    ● Oil (small amount)

    ● 1 teaspoon sugar

    ● 1 clove garlic

    #Instructions:

    >1. Onions first:

    Place the cubed onions into a cold pan with no oil. Turn on the heat and let the pan warm up with the onions. Once the pan is hot, add a small amount of oil.

    >2. Vegetable mixture

    Add the cubed carrots and red bell pepper to the onions. Stir and cook briefly.

    Add the tomato paste (or sauce), cubed tomatoes, salt, sugar, Vegeta, and black pepper.

    Cook on medium heat, stirring, until the vegetables soften and form a sauce.

    >3. Eggplant or zucchini (separate pan)

    In another pan, heat a small amount of oil. Add the cubed eggplant or zucchini. Cook it **separately** from the onions/mixture for about 20 minutes, until soft and not crunchy.

    Season with Vegeta.

    >4. Combine

    Add the cooked eggplant or zucchini into the vegetable mixture. Stir well to combine.

    Taste and adjust salt or sugar if needed.

    Cook everything together for 5–10 minutes, stirring constantly.

    Do not cover the pan.

    I love ikra but I usually cook all together and not separate. Thanks for the reminder. I need to make this again. So delicious
