I recently planted Brandywines a month ago and wanted to know from the first signs of pollination to fruiting how long before they start to blush so i can care for them better. (I have included a photo with arrows pointing to their current stage for useful tips. Australian gardener in temperate climate area btw).

In my experience, it depends a whole lot on the weather, especially temperature. I would suggest thinking of the days to maturity given on the seed package as the minimum time it takes for them to get to a ready-to-pick stage.
Brandywines take a looong time, 100 days from planting is usually what is advised on the packet. You are already at the stage where you can care for them as a flowering plant. Cut back on the nitrogen, not completely because they still need some energy to fruit. Anytime is a good time to be practicing good soil maintenance! How is your mulch, do you do cover crops, is your watering as even as it can be, is there any soil amending you want to do? Try not to focus too hard on the specific stage of the tomato fruit.
