    What did you add that gave it that orange color? Is that from the sausage? I’ve never had nor made a gumbo with that particular color before.

    If you can get your hands on some, smoked ham hocks make a beautiful addition to Cajun gumbo, or Bumble Bee canned crab for Creole. Costco has been selling whole ducks for $2.50/lb too, that was a fun inclusion on Christmas for me.
