I’m having a family dinner tomorrow, and I’m honestly not sure which one to choose? A USDA choice ribeye, or USDA prime new york strip. I’m planning to dry them in the fridge over night, and reverse sear (oven then grill). If you had the choice, which one is your go to?

    I pick the NY steaks but are there more well done steak eaters in your family? I wouldn’t buy prime for them if that was the case

    Prime NY strip no question. Ribeye is my favourite cut but if that level of marbling was my only option, i’d try any new cut.

    I’d take the strips. I prefer less thick fat and more marbling.

    The NY actually has good marbling. I’ve seen some a lot of “prime” cuts really look like choice at Costco.

    I choose ribeyes 99% of the time.

    I would take those strips in a second over those unmarbled ribeyes.

    New York strip all day. It has the lean for those who like it but also the strip of fat for those who like more fatty cut

    Holy shit, 18.99/lb in WA? That’s nuts. I need to check my local costco. Last time I noticed it was still around 13.99.

    NY strip (in my experience) is easier to cook/get a consistent temp on when cooking for people. Never done it on the grill tho i do a cast iron.

    Also that ribeye has a lottttt of fat

    When I was looking just now I struggled based on looks. The spinalis on 3/4 of the ribeyes looks pretty good, but the marble of the New York’s is better.

    Then I saw the price difference and it went out the door, the New York’s as prime are probably your best bet on that one.

    I think people giving you guff about it as obvious are looking at the sticker or something instead of really giving it a chance. Sure the ribeyes are leaner but the cap is pretty decent sized

    Same portion size, same relative size per steak, better marbling. The only thing giving me any pause is the large collagen strip and near total lack of fat on the NY cap.
