

The Socca itself is really simple, just mix up the ingredients and pan fry for 5-10 mins. This mix makes a large thinish Socca but use a smaller pan and more mixture for a thicker one, just cook a bit longer.
I use 1/2 tsp oil in the batter and 1/2 tsp in the pan for each one I fry.
You can top the Socca it with whatever you like, but I've tried with and without Houmous and it's nicer with.
A non stick pan is an absolute must. Otherwise it sticks like cement.
