I often think the average non industry person would lose their mind over at least one of our fairly regular procedures. I see so many TikTok’s of people ripping into random people for cooking videos and think wow yall would hate to see behind the show in a lot of restaurants in this country 😅
Not even that the things we’re doing are gross or unsanitary (usually, but, it does happen), but just that people are dumb and don’t understand what actual commercial food service can look like behind the scenes.

My favorite thing that non industry workers don’t know is that at the core of it, all “casual dining” such as chilis, TGIF, Applebee’s, etc are all FreshPoint/Sysco. Same chicken, same beef, same lettuce just prepared differently.
This is just from my experience in the northeast idk if it’s different elsewhere or if this is just a known thing. Open to being wrong lol.

The 7-up guy that came to service the often malfunctioning ice machine at the bar I worked at told me to drip some bleach into the black hose every night at close. He said it would gas off by morning and not effect the ice flavor but that it would stop the mold and biofilm that kept clogging the lines.

The only reason service gloves exist is because customers would find bare hand food handling as gross. It’s a mirage.
Unless you’re changing gloves every 30m or every new task/prep job, that’s far far worse than just constantly washing your hands throughout the day.
Ironically the only place ive seen use gloves properly is McDonald’s. Gloves on, put patties on grill, gloves off. And besides, those boxed gloves are gross. Porous boxes sitting in warehouses for god knows how long, with just a hole to reach in with you dirty hand to contaminate the outside of every glove in the box. Defeating the purpose entirely.

You can check the cleanliness of any restaurant in two easy steps. Get on the floor and shine a flashlight up the ice machine drain, and get on the floor and look up at the roof of the salad cooler. If you don’t see mold or biofilm in the ice machine drain, and you don’t see 17 years of ranch dressing on the roof of the salad cooler, you can bring your grandma there to eat tartare.
