  1. Sadly, very few people in the states even know about 00 flour.

    Save that potato water for the garden.
    Soil microbes do happy dances for potato water.

    I don't know why I thought there was going to be a splash of white wine in that pan..but I did.

  2. I got to try this, thanks for the recipe.
    Some feedback if you're interested. I understand what you're going for with the close ups and camera work. Personally it's too much, way too close that it took me time to adjust to the frame and ruined what this was about, cooking. I got distracted too often with the camera work instead of taking in what is said and done. All good though and if this is the style you want then continue and have fun, I'll still watch the videos.

  5. Fortunately, I live in Piemonte and agnolotti is the local norm. 😉 You should demonstrate Tajarin. It is like tagliolini, but higher egg content. I've never seen it outside of the region.
    In Argentina and Uruguay, “tallarines” is used generically to mean pasta noodles. I imagine it is because Piemontese emigrated to those countries.
