  2. For an extra fluffy and creaminess and structure add a half teaspoon of cream or milk , every time I cook scrambled or omelette eggs I add the milk I opt for cream when I do have it and the spice flavor of fresh cracked pepper in the eggs is a whole nother level lol

In Santa Cruz, Ca. in the 60's and 70's on the northwest side of town there was a Coffee Shop My mother waitressed at while attending UCSC…called the TipTop Coffee Shop The Owner and cook made most of her money off of truckers and the bar closing crowd. She sold the place and in the later 70's she Opened BEA's… next to the Rio Theatre. The place was tiny…. every saturday she had a line out the door and down the street because of the way she made heer Omelettes…

    My brothers and I are all 6'2" up to 6'5"… and I tell you, not one of us could finish her full sized denver Omelette…AD a side of Biscuits and sausage gravy and maybe by design… come next Saturday morning… you'd be hungry again. I don't know if she WHIPPED the eggwhites and folded the yolks back in or used whipping cream… but when the finished product came to the table it EASILY measured 6" high Including a generous layer of CHEESE and Sour Cream…

  6. i make these all the time, i dice the ham and veggies super fine. Takes me back to pure americana we need to bring diner culture back. Waffle house cant keep it alive by itself

  8. That's more of like a frittata than an omelette. An omelette is eggs first and then your ingredients and then you fold it over.

  9. I prefer a frittata over an omelette. I usually cook for a minimum of 3 people and a maximum of 150 people.
