My daughter asked me for cookies tonight and she is allergic to nuts sooo I busted these out for her 😁

These are approx. 1.5g Net Carbs each

1 cup Organic Sunbutter
1 large Egg
1/2 cup Monk Fruit Sweetener with allulose (adjust to taste)

Preheat your oven to 350 and line a baking sheet with parchment paper.

In a bowl, combine the SunButter, egg, and sweetener, stirring until well-blended and smooth.

Roll the dough into 1-inch balls and place them on the prepared baking sheet.

Flatten each ball with a fork, creating a criss-cross pattern.

Bake for about 10-12 minutes, or until the edges are slightly golden and the cookies puff up a bit.

Let the cookies cool completely on the baking sheet; they will firm up as they cool.

    Make sure you get the no-sugar version of sunbutter (I’ve never used it) but it will have 60 grams of carbs if you don’t.
