Saw a bone-in ribeye at the butcher shop and the dark urge took over.

Cooked in my oven to an internal of 120F, rested for 10 mins, then seared off in duck fat and basted with rosemary and garlic. Next time I may cook to an internal of 110F, but still a very tasty attempt at perfection.

    It’s more gristle now than steak. Twisted and fatty.

    You cooked it fine. But there’s too much pure fat in that steak for my taste. I’d feel cheated out of delicious meat.
