This Turkish lentil soup ( Mercimek Çorbası ) is comforting, and easy to make.
Ingredients (serves ~4–6)
2 cups red lentils, rinsed well
1 medium onion, chopped
1 carrot, chopped
1 small potato, peeled and chopped
½ tbsp tomato paste
1 tsp salt (or to taste)
Chili flakes, to taste
Cumin, to taste
2 liters hot water or chicken broth
Olive oil
Heat olive oil in a pot and sauté the onion until soft. Add tomato paste and cook briefly. Stir in the carrot, potato, and lentils, then season with salt, cumin, and chili flakes. Pour in the hot chicken broth and cook until everything is very tender. Blend until smooth and creamy. Serve hot with chili oil on top.
