Oysters Rockafeller

Celebrating National Oysters Rockafeller day with making them 2 different ways with tinned fish.
Not authentic by any means, but delicious nonetheless.
A quick and easy version and also one a little "fancier" 😊

Both versions deliver a flavor packed dish and pairs perfectly with the crispy crostini.

Breadcrumbs topping:
1/2 cup Panko breadcrumbs
1 Tb chopped parsley
1 Tb parmesan
4 Tb melted butter
1 t black pepper
1 Tb fried garlic

Rockefeller sauce:
1 Tb tarragon chopped
1 shallot minced
3 cloves of garlic
1/2 a lemon worth of zest
1/2 cup baby spinach chopped
1/4 cup pecorino romano
3/4 cup white wine(I like sauvignon blanc)
1 cup of heavy cream
Salt and pepper to taste

    Although I added a splash of Pernod and a ton of spinach to my lazy cheap version, I laugh out loud about how tasty it is. Instead of Oysters Rockefeller, I guess mine is Oysters Al Bundy.

    I like this recipe format. Very quick, easy to follow and not like all those slap-dash ones where you have no clue what seasonings they use because they have annoying music and way too much editing.
    I’d like to see more like this.

    That looks great.

    That also shows one more reason why versions where you bake in the can are dumb. There’s no room for the rest of the ingredients. Using a bigger oven safe dish doesn’t just avoid potential health issues, it means you’re not skimping on other good stuff, or worrying about spillage.
