
Since you all liked my first batch so much, here’s round two! For these I doubled the original recipe and doubled the size of each bagel. They were big and beautiful and a huge hit at brunch!
Recipe but double everything:
• 500 g bread flour
• 250 g active sourdough starter
• 230 g water
• 12 g salt
• 20 g honey

My plain bagels came out superb, but my cinnamon raisin ones were absolutely disgraced because I decided to use a bigger sheet pan that wasn’t of the highest quality. Now I have burnt cinnamon raisin bagels!
