Working on my Carbonara game. It is getting there… Didn't have enough Safran left. Normally more yellow. Still delicious (I mean with so much parmesan and butter everything is good)

Nice plates you serve here. Both, your carbonara and your risotto look very creamy.
Mind you, that in traditional Italian cuisine parmigiano and sea food don’t go together. Some people consider that a sacrilege. The usual explanation is that the strong, salty taste and flavor profile of parmigiano doesn’t go well with the subtle, delicate saltiness and fragile flavors of many sea produces.
