    Ingredients:

    2TB butter

    1/2 cup brown sugar

    1-2TB water (more if it looks too dry)

    2cups pecans

    1 tsp cinnamon

    Pinch salt

    Method:

    1. Over medium low heat: add butter, brown sugar.

    2. Add water, pecans, cinnamon and salt

    3. Cook for several minutes, continously stirring as the sugar can quickly burn.

    4. Reduce until liquid turns into a syrupy glaze

    5. Cool on parchment paper.

    Used to work at a place that we had a cheese board and one of the parts of it were candied walnuts. We would take a simple syrup and cook walnuts in them for it felt like hours. Then once the syrup was absorbed and set up a bit we would deep fry the walnuts. The syrup would come out and set up as a caramel shell around the nut. They were great.

  6. Here in Brazil this is really popular with raw peanuts. Just a warning for those who never made caramel before, specially when adding the water, it can get a bit scary but there’s no need to panic.

    I’ve always used egg white, brown sugar/cinnamon, and the oven. Does this make it more like a peanut brittle texture?

    The egg white coats the nuts, making the sugar stick and then the oven would candy the nuts. You just have to mix them every 20 minutes or so to not burn the nuts.

    I’m always lookin for a better way to make holiday candy. This seemed like more work but probably tastes much better.

    Growing up I was basically told these were healthy because it was nuts, a great source of protein.

    You can also prepare this in a microwave in a glass dish by 1.5-2 min cook times to stir and check to prevent burning.

    Also mix it up with other nuts and spices like nutmeg, all spice, clove etc…

    Is TB an actual initialisation for tablespoon? Usually you initialize the syllables, so Tbs or I’ve also seen Tbsp. I personally use Tbsp because it makes it clear next to tsp.

    I’ve never seen TS anywhere.
