Preparation – Marinate 1kg chicken thigh cut in bite sized pieces in 2tbsp Cajun seasoning, 1tbsp garlic powder, salt, and pepper – Cut four andouille sausages in coins – Dice one medium onion, one red pepper, and one yellow pepper – Mince a few cloves of garlic
Cooking – Sear the chicken (in two batches if needed) for around five minutes and remove – Brown the sausages and remove – Add some butter and cook the onions and garlic and cook for a few minutes – Add in the red and yellow pepper to cook a couple of minutes, then add two tablespoons of tomato paste, add 2 tbsp of Cajun seasoning, some salt and a sprinkle of sugar, and a bunch of black pepper – Pour in some white wine or chicken stock to deglaze. After a while, add in a can of diced tomatoes and 150g of heavy cream – Cook 450g pasta for two mins less than required time and add to the pan while mixing. Add in cheese of choice… I used 5 slices of American cheese because that’s all I had 🙄 – Mix and add pasta water to adjust consistency

The recipe looks interesting and id like to try it some time, but what is a good alternative to the sausage, i dont think we have it here where i life also how much of the sausage is needed, also how much asparagus do you use or do you just wing it
