Their playful yet exacting menu flips tradition on its head: think a Temaki Carbonara hand roll with creamy Parmesan mousse, truffle-cured egg yolk and shaved Parmesan or the Tama-Kimchetta with porchetta, house-fermented kimchi and tamago pancake—bold-flavoured surprises that defy expectations.
