
I got this bento on the Shinkansen when I was in Japan last spring. Obviously there’s chicken katsu and rice, but what are the other sides pictured? I’m assuming there’s a sweet potato, and other pickled items. Im craving this meal so I’m going to try to recreate it at home!

Hijiki on the top, kinpira gobo in the bottom. Looks like you have satsumaimo (Japanese sweet potato) as well above the kinpira. Not too sure about the pink thing, could be takuan which is usually yellow but I’ve seen other colours before.
this pink one is “daikon no sakurazuke”,radish marinated in ume vinegar. It is usually found in bento.
Black hijiki.
Brown kinpira, probably gobo and carrot.
Pink pickled ginger.
Yellow sweet potato, guessing roasted.
