134 for 28 hours then a sear in cast iron. Served with the Serious Eats version of a bearnaise sauce and roasted carrots, beets, fennel and asparagus with hot honey. Even my picky teens couldn't get enough.

Bernaise recipe. It was fantastic on the roast and would have been great on the veggies too but I wanted to try out a new Carolina reaper infused honey my wife got me
Interesting… How tender was it? Did an 18hr eye round for Christmas and it was reasonably tender, but nothing crazy. 28 hours seems like it would help to really start to break it down a bit more just because of the longer time

Next time go with a higher grade beef, there’s a reason why high quality restaurants don’t serve on the menu

Looks good to me. Just my opinion though, but a plain white plate would make this look stunning. The designed plates takes away from the look of the food, distracts the eye, no?
