Huge blisters on crust

    Not sure if the original caption saved. But looking to see if anyone knows that these big blisters are a sign of over fermentation? It’s a 74% hydration and seemed to expand a lot during baking. Baked at 500 for 20 min and 450 for another 20 without the lid. 

    P.S. this rested in the fridge about 6 hours before baking! No ice cubes used.

    Large blisters are actually highly desirable. It’s a sign of good fermentation and cold proofing.

    Blisters usually appear during the cold proof as small gas bubbles make their way to the surface of the dough. It’s a sign of properly fermented dough and many people chase after lots of blistering.

    Love it.

    I used to spray my bread down with a water spray bottle, now I just use my hands to shovel water on to the dough before I bake it, had good results. Worth a try y’all
