
I have never been someone that enjoys tofu and I was sure I'd tried it every way possible: marinated, breaded, baked, fried, etc.
I made a tofu scramble this morning and added mustard greens, bell pepper, onion, tomato paste, soy sauce, nutritional yeast, garlic powder, turmeric, and paprika. Holy crap have I been missing out. I would maybe switch the mustard greens out for kale since I don't love the bitterness of them in this, but everything else is so good!

Hell yeah! Put that shit in a tortilla with potatoes, some hot suace, roll it up as a breakfast burrito and woooo baby we eating good. Adding some plant based sausage takes to another level too, though I try to limit those processed meats.
This is a weekly go-to for me. I also sometimes add brown rice or chickpea pasta. I don’t use tomato paste or soy sauce, but cumin and aminos. There’s no wrong way to make it!
I worked at a restaurant that made a great tofu scramble.. very similar to OP.

Don’t sleep on plain (ish) tofu scramble either, just vegan butter, spices, nooch, bit of vegan cheese and a bit of vegan creme fraiche or sour cream, perfect on a breakfast sandwiches, wraps, english breakfast etc.
Just curious what the yeast is for? Does it give it that eggy soft crumble to it?
