
Sous vide and grilled octopus and pork belly with homemade romesco sauce and grilled bread. Octopus is just oil, salt and pepper. Pork belly is a mix of Korean bbq sauce and gochujang.
A tree fell on the power lines near us right after sous vide was finished, hence the candle light.

That looks unreal. Octopus + romesco is a killer combo, and the candlelight honestly fits.
I’ve been trying to dial this in too but mine still comes out a bit squishy. What’s your full process start to finish, especially sous vide time/temp and how hard you finish it on the grill?

I think the power outage set this off, it’s is a whole vibe. Made smoked pork belly for my good friend the other night. Used it for tacos and they absolutely hit but the ambience was nothing compared to what you have here. Cheers!
