I remember in my college dorm I used to make this dessert in my blender out of ice, whey powder, Splenda, and I don't really remember what else or how I exactly made it.
So lately I've been curious about super high volume icy desserts. I ended up asking AI about it and got some recipe suggestions. I wouldn't trust gen AI to be great at spinning up recipes, but this was a pretty small investment so I figured I'd experiment. The recipe, through my own edits and interpretation:
– .5c unsweetened applesauce
– .5c water
– .25tsp guar gum
– salt, cinnamon, vanilla, and sweetener to taste
– ice cubes (I ended up using 9 cubes, probably would have used a few more if my processor were bigger)
Steps:
– Stir together everything but the ice ahead of time and leave in the fridge to get cold
– Pour mix into food processor and whiz until it gets frothy
– Add ice a little bit at a time, pulsing and blending in between until the ice is well crushed and incorporated
All things considered, it turned out well enough. I think I got a bit over a pint out if this for a mere approximate 60 calories. While pouring it out of the processor I had a Jaws "we're gonna need a bigger bowl" moment. Of course it's mostly water and if you don't eat it fast it will melt…
It got me real curious what I can get with different ingredient combinations using stuff like yogurt, pumpkin, and pea protein
Anyone else ever try something like this? Any idea if a recipe like this can be adjusted to work in a creami for a more uniform texture to try once mine arrives?
