Cacio e Pepe con vongole I got at a restaurant in Umbria, IT
I’ve spent a fair amount of time in italy and this is one of the best bites of food/cacio e pepe ove ever had. The baby clams were insane. Sad I can’t get them where I live. 😭

Also might be a silly question but I don’t eat seafood: how do you consume this? I mean what do you do with those little shells? Slurp them one by one?

Damn, I would never order or eat that in Italy.
Lasagna is dank though. I’ve not personally heard anyone say it’s not Italian (it definitely is).

To anyone doubting the pairing of seafood with cacio&pepe I once had a cacio&pepe with a battuta of raw red shrimps (like a red shrimp tartare) and it was the single most delicious pasta dish I’ve ever had (I’m italian btw).

I’ll be honest, I’m sure it was done well and it was nice, but clams and cacio e pepe is not a pairing I would be interested in.

Putting seafood in a shell into sauce is psychotic.
I put up with it for cioppino and the like, but… come on.
How do kitchens have so many specialized jobs and not one UX designer!?!

“Are we sure people will enjoy picking wet mussel shells out of their linguini? I could pull the meat out real quick for you. It’s way easier here next to a sink than at a small table in a dimly lit room when you’re dressed nice.”
“Wouldn’t it be a better idea if we took the garbage part of the fuckin’ sea bug out of this crawfish soup? A lot of people show up drunk, and a lot more leave drunk. I’m just saying we could make this easier.”
Have these people never eaten dinner at a restaurant with a family? Every bite, every action, every mistake judged and criticized.
Hey, maybe I can impress my date by getting tomato sauce and clam juice all over both of us.
