



Steak and eggs. Didn’t have fresh broccoli, asparagus, or biscuits, but dipping rib eye in the hollandaise sauce was delicious. Whisk 4 egg yolks with 1/4 cup cold water over low heat til foamy and a bit thickened. Two minutes. Don’t stop whisking!!!Gradually pour in 1/2 cup melted unsalted butter, 1 tablespoon at a time. Whisking constantly about 6 minutes until thick and glorious. Toss in 1/2 tsp salt and squeeze of fresh lemon juice. Serve immediately (or hold over hot water for a bit). All good.
