Finally did a good one lol. Smoked for about 16 hours total, first 12 at 180 because that’s where I get good smoke and then the rest at 225. I wrapped it in foil at 170. Probably could have let it go a little longer. I pulled it around 200 and the flat was ok but not perfect. Point was absolutely divine.

    Looks great, I have a Traeger and hate it so far (been a offset guy for 35 years) I will try your method and hopefully change my opinion on pellet smokers. Thanks for the temp and time guidance. 👍

    I have a camp chef woodwind pro pellet smoker and do a similar method in terms of time and temp. However, my flat comes out a little dry. Any ideas on how to keep it moist like the point?
