The first CAVA, a fast-casual Mediterranean restaurant chain, could be coming to the Milwaukee area in Greenfield, according to City of Greenfield Plan Commission documents.

Applicant Meghan O’Malley is proposing to operate CAVA in a 2,800-square-foot space at 8833 W. Sura Lane in the 84 South development. The tenant space was most recently occupied by Mod Pizza before it closed in 2025.

Since Mod Pizza has been gone less than 12 months, the request will undergo a Special Use Review and does not require a public hearing, according to city documents.

The Plan Commission will vote on the proposal Jan. 13.

What is CAVA?

Founded by Greek-American friends Ike Grigoropoulos, Dimitri Moshovitis and Ted Xenohristos, CAVA is a fast-casual chain specializing in customizable bowls, salads and pita dishes inspired by Mediterranean flavors. The brand has more than 400 restaurants nationwide, according to its website.

How big would the Greenfield location be?

The restaurant would occupy a 2,800-square-foot tenant space and would be the first CAVA location in the Milwaukee area, according to city staff reports.

What are the proposed hours?

The proposed hours of operation will be 10:30 a.m. to 10:30 p.m. daily.

How many employees?

It would have two to five full-time employees and 10 to 12 part-time employees.
