INGREDIENTS (for 2 servings)
🟠 For Roasted Butternut Squash:
• 1 ½ cups butternut squash (peeled, cubed)
• 1 tbsp avocado oil
• ½ tsp chili flakes
• ½ tsp Italian seasoning
• Salt + black pepper to taste
🍗 For Marinated Chicken Breast:
• 1 chicken breast (boneless)
• 1 tbsp avocado oil
• ½ tsp chili flakes
• ½ tsp Italian seasoning
• Salt + black pepper to taste
• ¼ tsp cayenne pepper
• 2 garlic cloves (grated)
• Juice of ½ lemon
🍚 For Truffle Risotto:
• 1 tbsp avocado oil
• ½ chopped onion
• 2–3 garlic cloves (minced)
• ½ cup chopped mushrooms
• 1 cup risotto rice (or arborio rice)
• Salt + black pepper to taste
• 400 ml chicken lemon garlic broth
• Handful of spinach
• Optional: 1 tsp truffle oil or shaved truffle
🍋 Final Garnish:
• Grated Parmesan cheese
• Zest of ½ lemon
• Black truffle shavings (or drizzle truffle oil)
• Olive oil drizzle
🔸 1. Roast the Butternut Squash
Cut squash into cubes. Toss with avocado oil, chili flakes, Italian herbs, salt, and black pepper.
Bake at 400°F (200°C) for 12–15 minutes until golden and soft.
🔸 2. Marinate & Cook the Chicken
Coat the chicken breast with oil, chili, herbs, cayenne, lemon juice, garlic, salt, pepper.
Pan-sear each side for 5–7 minutes until golden and juicy. Shred or slice.
🔸 3. Make the Risotto
In a deep pan, sauté chopped onions and garlic in avocado oil.
Add mushrooms, cook 5 minutes. Add risotto rice and toast for 2 minutes.
Pour in broth, season with salt and pepper. Add spinach.
Simmer and stir for 25–30 minutes until creamy and soft.
🔸 4. Assemble & Garnish
Spoon risotto into a bowl. Top with roasted butternut squash and chicken.
Add Parmesan, lemon zest, black truffle, olive oil drizzle.
