Nagoya is famous for Yabaton (miso katsu) and Hitsumabushi, but you should definitely try Taiwan Mazesoba too — it’s one of the best local dishes here.

Even though it’s called “Taiwan” mazesoba, it’s actually a Japanese dish, born in Nagoya.

No soup.

Spicy minced pork.

Egg yolk.

Green onions, chives, seaweed, fish powder…

You mix everything together until it looks chaotic — and then the flavor hits hard.

And just a warning:

It’s actually pretty spicy. Like… seriously spicy 🔥🔥🔥

If you’re sensitive to heat, be careful.

But that spicy-umami combo is addictive,

and the best part is adding rice at the end to finish the leftover sauce — pure happiness.
