Budae Jjigae (One-Pot Korean Army Stew)

Ingredients for the Stew

  • ½ can spam, sliced
  • 10 mini sausage, or 2 hot dogs (diced or sliced)
  • ½ block soft or firm tofu, sliced
  • ½ cup rice cakes
  • ½ onion, sliced
  • 1 bunch enoki mushroom
  • ½ cup kimchi
  • 1 green onion, chopped
  • 1 pack instant ramen noodles
  • 2 slices of American cheese

Ingredients for the Sauce

  • 5 clove garlic, minced
  • 2 tbsp Gochugaru (Korean chili flakes)
  • 1 tbsp Gochujang (Korean chili paste)
  • 1 tbsp soy sauce
  • 1 tbsp mirin
  • 2 tsp sugar
  • ⅛ tsp black pepper
  • 1L Chicken Stock or Anchovy Stock

Instructions

  1. Prepare the sauce by mixing minced garlic, gochugaru, gochujang, soy sauce, mirin, sugar, and black pepper in a bowl. Set it aside.
  2. In a shallow pot, add spam, sausage, tofu, rice cakes, onion, enoki mushroom, and kimchi. Then add the sauce and chicken broth. Cover with a lid and bring the stew to a boil over high heat.
  3. Once the stew starts boiling, add ramen noodles and cheese. Cover the pot with a lid again and let it cook for a few minutes until the noodles are cooked through.
  4. Remove the lid. Garnish with green onions. Serve hot with a bowl of steamed rice (optional), and enjoy!

    When I lived in South Korea for a year, they had something like this at the on base snack bar and it was pretty amazing and cheap. Kraft American cheese and all. It helped cut the heat.
