First time I ever made it what do you think?

    needs more black eyed peas! we made this for new years.

    10 cups of water
    2 lb of ham hocks
    1 lb of ham
    3 cups of chopped up collard greens
    1 lb Black Eyed Peas
    1 medium chopped yellow onion
    1 1/2 tablespoons of olive oil
    1 cup of chopped celery
    3 cloves of garlic
    3/4 teaspoon of kosher salt
    1 teaspoon of black pepper
    1 teaspoon of cumin
    1 1/2 teaspoons of thyme
    2 teaspoons of chopped up dried bay leaves

    Take a frying pan saute your chopped up onion in olive oil and when it starts to look translucent put your chopped up cloves of garlic and cumin in it for a couple minutes then dump all the ingredients ( except the salt black pepper and thyme) in a pot.
    Bring it to a boil then back it off until it’s simmering and let it simmer for about 4 hours.

    Pull the ham hocks out strip them down take all the meat put it back in the pot the ham that’s in there should just break down then add the time Salt and Pepper and you’re good to go.

    Caution when you’re breaking down the meat off of the ham hocks it’s extremely hot
