    I’ve talked about Vincent Dauvissat [before](https://www.reddit.com/r/wine/s/2YTMmCkOp3), so I’ll skip straight to this bottle:

    This is from Petit Chablis, a tiny appellation whose main difference with Chablis is the soils (Chablis = Kimmeridgian, while Petit Chablis = Portlandian). The most reputable Petit Chablis vineyards sit just above the Chablis Grand Cru site — this Dauvissat bottling comes from a single plot adjacent to ‘Les Clos,’ perhaps the most reputable Chablis Grand Cru climat. It undergoes the same treatment as all Dauvissat Chablis, with some aging in old oak and time on its lees to soften the wine and add complexity.

    **Tasting Notes:** medium gold color. Nose of lemon, chalk, and white blossom. Highly acidic palate matches the nose, with some honeyed notes showing up in the medium+ length finish. Beautiful wine. I don’t know why I expected this to be less impressive, but it’s a perfect example of “producer, producer, and producer” mattering most in Burgundy. It drinks comparably to many 1er Crus, though then again, it IS priced like many 1er Crus…
