What would be one step down from Four pepper blend? It was a bit much as a daily driver. I’m working my way thru the dark and smokey and while great, is not hot enough and also pretty specific with the smoke. I have my eye on the hatch valley green, but figured I would ask the experts.

Man, FlatIron is SO GOOD! I have all of those and you’ll love them. The Calabrian are fantastic on pizza and pasta. The four pepper is an easy sub any place you need “crushed red pepper”, the Hatch Valley are great on eggs and verde pork. I like the Sweet Heat in things like instant ramen, and the Kimsa is pretty hot! Enjoy the “I Can’t Feel My Face” on anything you want to make damn hot.
Pro tip: ALWAYS use the grinder they sent. It brings out the flavor and heat. And when you use it, do a back-and-forth motion as it’s not meant to be spun in circles.

I have the green and the 4 pepper blend red one. They are both great. The reds a bit hotter but the flavor on both are good.
