  3. Philadelphia cream cheese is no longer the best .they add a lot of stabilizers to the product. Which doesn't allow the cheesecake to set well. Use Tillamook

  4. Okay, pro tip, I tend to put a pan with water in it below the cheesecake if I'm using a spring form pan. And, if you want to, throw a Pyrex casserole dish or something on top of your cake to hold the steam in.

  10. You’re right, the water should be hot, not boiling. A tip from an awesome chef who hit the genetic culinary jackpot by having an Italian father and a French mother. His mother had a restaurant with a Michelin Star. He started appreciating with a chef (not one of his parents) before he was10, I believe.
