Please tell me it’s getting hit with a torch or sorts. Nothing on there has *any* good caramelization.

Is there any pretense or effort to serving warm or even hot food in a context like that?

Most of the low end banquets, I have been to deliver lukewarm chicken, and crunchy vegetables. Luckily, it has been a long time since I have been to one.

Is the bacon supposed to be raw? Legit question.

What’s with the meat seatbelt on those beans? Looks almost like a raw pork fruit roll-up.

  5. I wanna say these are going to get trolley stacked and fed into a rationale…right?!

Spam fritter with a slice of raw beef and raw bacon?

Plates seem to check out. 1500 / 4 rows = 375 plates per row. Looks like 15 plates per stack. 375 / 15 = 25 stacks per row. Looking at the photo it appears to match up with 25 stacks per row.

My questions are why are there 2 different platting, and none of the asparagus have florets?

I can’t imagine how room temperature this all is, while the chefs are chatting at the end of the room.

I see a bunch of food getting cold. Rich people banquets must be full of cold food that sucks. garbage.

I’m not a fan of eating room temperature food that’s supposed to be served hot. Starts making me question food safety.

I wouldn’t eat this, you’re showing us a picture of food that needs to be thrown out. I would actually be pissed if you served me this as cold as it looks.

Presentation of bacon aside, i don’t think the people here talking smack has ever done banqueting in their life.

Imagine plating 1500 x 3 or 4 courses ala minute. The last guest to receive their food would have been able to go have a full meal elsewhere and come back just in time for it to be served.

Lmao – the people saying this is ai are fucking idiots and have never been anywhere near a banqueting kitchen, and have zero understanding of how those operations run.

Your giving me anxiety and now I have to go to sleep in order to even plate one thing tomorrow

How many Rationals are you running to serve 1,500 in a timely manner?

I am in the process of speccing a 750 seat venue in central London, and it would be very interesting to know!

Could you post a photo of a “heated” plate?

While I know cured bacon is safe to eat, floppy, uncrisp, bacon is not what I’d call “great”.
