I watched YouTube videos on how to make kimchi about 100 times and then made it myself.

  1. Salted 12 heads of napa cabbage with 3 kg of salt mixed with water for about 10 hours.

  2. Rinsed them thoroughly with clean water and drained the water from the cabbage for about 3 hours.

  3. Prepared the seasoning by mixing 1 kg of chili powder, 400 g of fish sauce, 300 g of fermented shrimp paste, 300 g of minced garlic, 50 g of minced ginger, and 3 chopped radishes.

  4. Carefully coated each leaf with the seasoning.

I'll cherish this and eat it little by little.

    Hahaha ok well run towards the wall!! That’s a lot for your first batch!

    But yeah with a good recipe and proper fermentation it’s hard to go wrong

    I had some extra funky homemade kimchi i just used for kimchi jigae and it was amazing
