I found the best New York style pizza in Thailand and then we did something illegal: turned it into a Greek chicken gyros inspired pizza at Tony’s.

We trial two versions
White base – yogurt cream garlic oregano style
Red base – classic New York tomato sauce

Souvlaki style marinated chicken, a fresh Greek salad salsa with tomato red onion oregano red wine vinegar parsley and olive oil, plus a whipped feta tzatziki style sauce with yogurt feta lemon garlic and dill.

Kitchen tips from the boys
Marinate the chicken overnight for the best flavour
Dial in crispness with their hybrid cook method
Stretch the dough with semolina for extra crunch
We debate olives vs no olives and test both

Taste test verdict
The winner was white base with no olives. The white base made it taste like a chicken gyros on a pizza, and the olives pushed it a bit too salty for this combo.

  5. If it had a bit less salad and was cooked more crispy it wouldnt be so much slop jalop, could have maybe put it back in for a minute with the salad also then it would infuse with the pizza to not drop everywhere
