I remember as a young bride in 1979 patting the seasoned meat into a rectangle and spreading mashed potatoes on it. Then rolling it to up into a loaf and baking it with tomato sauce on top.
It was okay, I guess. Just like that marriage that didn’t last.
One does not simply mess with a tried and true meatloaf recipe from mom!
