It looks like raw squid mixed with a Korean chili sauce. We call it mul-hoe, 물회, in Korean. Sorry, that’s not raw squid but I highly recommend trying raw squid as well. It’s called 오징어물회 which means raw squid.

The “main” split people talk about is Pohang (Gyeongbuk) vs Gangneung–Sokcho (Gangwon) — and the big tell is whether it comes with those ice crystals / slushy broth or not. Either way, it’s basically built on that tangy, vinegary base.
And then you’ve got the Jeju version, which is kinda its own lane: they add doenjang, so it comes off more savory/nutty than the usual bright-sour vibe.
